So just to add a bit of variety to the blog, I thought I would post one of my favorite pumpkin spice recipes.  As anyone who knows me knows that I can never wait for summer to be over.  I'm not a fan, we don't get along and really...I hate it.  So the minute it becomes August, in my mind it becomes fall.  Since I didn't really do a lot of fall baking last year I made sure that didn't happen again this year.  I thought I would pass along this recipe and hopefully it brings you as much fall happiness as it brings me!

Here is my recipe for the cream cheese icing which goes along so perfectly with the cupcake!

Cream Cheese Frosting (101 Gourmet Cake Bites by Wendy Paul)

8 oz. cream cheese, softened
8 Tbsp. (1 stick) butter, softened
3 3/4 cups powdered sugar
1 tsp. vanilla

Beat cream cheese and butter until smooth and light.  Stop the mixer and add sugar and vanilla extract.  Beat frosting, starting on slow and increasing your speed until frosting is nice and creamy.  Add 1 or more tablespoons of milk (or cream) if frosting is too thick.
