Pumpkin Time with Grandpa

Last week I went with grandpa to Wheeler Farm to pick out pumpkins, ride in the wagon and do a hay bail maze.  It was a lot of fun.  Mom bought some duck food so I could feed the duck and geese.  That was fun but kinda scary because they kept following me.  I loved the hay maze because I got to lead mom and grandpa around.  I knew where I was going though.  They shouldn't have been so worried.  Then I got to pick out some pumpkins.  I got some good ones and I'm excited to carve them out!

Spooky Good Time

This weekend was Aunt Kristin's Halloween party.  It was awesome this year.  We played a bunch of games like being wrapped up like a mummy, ghost ring toss, and my favorite...a scavenger hunt.  That was awesome.  We were upstairs, downstairs, outside.  I found the last clue that led us to the treasure.  And of course I'm Garfield again this year.  I didn't even want to alter my costume either.  Mom said she would make Garfield a superhero or something, but I like him just the way he is!  Thank you Aunt Kristin for a fun party!

The Fair

This year I went to the fair for the first time.  It was a lot of fun.  I saw a bunch of animals, I got to race a duck with daddy, I went down the big slide with mom and I got to play in a bubble on water.  That was the best part.  I did not want to get out of that thing.  I'm already looking forward to next year.  Maybe mom will let me ride more rides!

First Day of 3PreK

Today was my first day of school.  I was so excited to go.  This year there are 15 kids in my class.  10 of them are girls.  I like that ratio.  We also get a gym class and a music class.  Mom of course is head of everything so I have a feeling I will be seeing her a bunch this year.  Time sure does fly.  Before mom knows it I will be graduating!!

Vacation!

This weekend we went on vacation to Mesquite.  I had SO many firsts this trip.  I swam by myself for the first time, I went down the slide by myself for the first time and I helped mom build a metal detector.  And what I mean by helped...I watched.  And what I mean by build...I mean mom actually had to build the thing.  Wires, chip board, screws etc.  Hey, that's the kind of fun you get for a $2.50 toy at Walgreens.

Pumpkin Spice Goodness

So just to add a bit of variety to the blog, I thought I would post one of my favorite pumpkin spice recipes.  As anyone who knows me knows that I can never wait for summer to be over.  I'm not a fan, we don't get along and really...I hate it.  So the minute it becomes August, in my mind it becomes fall.  Since I didn't really do a lot of fall baking last year I made sure that didn't happen again this year.  I thought I would pass along this recipe and hopefully it brings you as much fall happiness as it brings me!

Here is my recipe for the cream cheese icing which goes along so perfectly with the cupcake!

Cream Cheese Frosting (101 Gourmet Cake Bites by Wendy Paul)

8 oz. cream cheese, softened
8 Tbsp. (1 stick) butter, softened
3 3/4 cups powdered sugar
1 tsp. vanilla

Beat cream cheese and butter until smooth and light.  Stop the mixer and add sugar and vanilla extract.  Beat frosting, starting on slow and increasing your speed until frosting is nice and creamy.  Add 1 or more tablespoons of milk (or cream) if frosting is too thick.

Lagoon Day 2013

Daddy's work had Lagoon Day again and I have been looking forward to this all year.  Me and mommy were still on the mend from being sick, so the day started off a bit slow, but once I remembered how fun the rides were it was awesome.  My favorite ride was Bambora.  I lost count of how many times I rode that with mommy.  My second favorite ride was Rattlesnake Rapids.  Mom and dad got soaked.  I got wet too, but not as bad as they did.  It was nice though.  It was so hot out.  Had it not been for the long line, we would have done it again.  I can't wait for next year because I will probably be big enough to ride on more rides!
